@itslenitas: Read the story here: Joyce Hsieh moved to LA from Taiwan to pursue pastry, eventually becoming a bakery sous chef before burning out and stepping away from the restaurant industry. Joyce and her late grandfather were the only two family members who worked with flour. This meaningful connection is evident in her bakery. During COVID she started baking from home. That little microbakery eventually grew into supplying tarts to Yang's Kitchen. Joyce paid homage to her grandfather by naming her bakery after him. Translating his mandarin name f4 to pine and thus creating Pinecone. She secured the space in 2023 and after nearly three years of building, Pinecone finally opened its doors. I met Joyce a year ago when I was the educator for counter culture coffee here in Los Angeles. This was before they were open and she shared with me the challenges she was facing at the time.
