Peanut butter caramel • 1 cup (260 g) peanut butter • ⅓ cup (110 g) maple syrup • 1 tsp vanilla extract Nougat base • 1 cup (95 g) almond flour • ¼ cup (80 g) maple syrup • 2 tbsp (28 g) coconut oil, melted • 2 tbsp (16 g) tapioca starch • 1 tsp vanilla extract • Pinch of fleur de sel Coating • 1 cup (175 g) dark chocolate (70% or higher) • 1 tbsp coconut oil Mix the peanut butter, maple syrup and vanilla until you get a thick caramel. Set aside. Blend everything for the base until you get a soft nougat texture. Press it into a lined tray, prick it with a fork, and bake at 325°F / 160°C for 18 to 22 minutes — until the edges are lightly golden and the top is matte. It stays soft coming out of the oven, that's normal. Let it cool completely, then spread the caramel over it and freeze until firm.
