I work for USDA processing plant, and yes we need inspectors. Farmers do bring contaminated livestock that gets turned away by the inspector, for good reason.

We buy own cow from a friend and take it to a processor. My concern is that the processor will be shady and unclean and not follow important guidelines for food safety. Does that make sense?
