Oven Roasted Chicken and Potatoes Ingredients: 2 lb chicken legs and thighs 3-4 potatoes, cut into thick slices 3 tbsp tomato paste 8-10 garlic cloves A handful of fresh parsley/coriander 2 lemons, freshly squeezed 2-3 tbsp white vinegar Salt, to taste 1 tsp red chili powder 1 tbsp Cajun seasoning 1 tbsp garlic powder 1 small onion 1 tbsp onion powder 4 tbsp oil Method: In a food processor, combine the onion, tomato paste, garlic, parsley, lemon juice, oil, salt, red chili powder, garlic powder, onion powder, Cajun seasoning, and vinegar. Blend until smooth. Preheat the oven to 375°F (190°C). In a baking dish or skillet, create a layer of potatoes. Top the potatoes with chicken, making cuts in the chicken to allow the marinade to penetrate. Brush the blended marinade evenly over the chicken and potatoes. ( you can Marinate the chicken overnight ) Sprinkle some more Cajun seasoning on top . Roast in the preheated oven for 30 minutes, covered. Then, uncover and bake for an additional 20 minutes at 425°F (220°C) until the liquid is evaporated and the chicken is cooked through. Tips: Adjust the amount of garlic and chili powder to your desired level of spiciness. Use fresh and high-quality ingredients for the best flavor.
