Il faut distinguer la pastèque Citrullus lanatus, domestiquée il y a quatre millénaires, à pulpe rouge, sucrée, consommable crue, de Citrullus amarus Schrad[2], une autre espèce nommée melon d'eau à confiture ou citre, dont la chair blanche, à graines rouges ou verdâtres, doit être cuite pour être consommée (en France, on en fait de la confiture). Cette citre[n 2] a longtemps été considérée comme proche de la pastèque cultivée[3] mais les travaux de phylogénie moléculaire ont montré qu’elle n’est ni une espèce sœur ni un parent très proche de la pastèque (Chomicki et Renner[1], 2015). Comme souvent avec les plantes cultivées, le même terme de « pastèque » désigne suivant le contexte la plante ou son fruit, par métonymie. À noter que le Grand Robert mentionne cependant que le fruit de la pastèque est le melon d’eau, même si « pastèque » est plus couramment utilisé pour désigner le fruit.
