Baked Rigatoni ✨ 1 450 g package of rigatoni 900 g of passata 1/4 cup of olive oil 3 garlic cloves 1 400 g package of ground pork 1 yellow onion (diced) Salt and pepper for seasoning Sprinkle of dried oregano and dried parsley 300 g of mozzarella 1/4 cup of Parmigiano cheese 1 cup of smooth ricotta cheese Start by cooking your sauce. Heat olive oil in a medium saucepan pan, add garlic cloves and once slightly golden pour in the Passata. Fill most of the jar with water and add to the saucepan. Allow to boil for 1-2 minutes then partially cover and lower heat to a simmer for 30-40 minutes. Separately cook the onions and ground pork. Add seasonings and once cooked add to the sauce. Cook the rigatoni (1-2 minutes less than packaged time). Reserve a cup of starchy pasta water. Drain and add cooked pasta, meat sauce, and pasta water to the pot. Along with sprinkle of mozzarella cheese. Stir to combine. Transfer 1/2 of the rigatoni to a deep baking dish. Add spoonfuls of ricotta. Top with a sprinkle of mozzarella cheese. Top with remaining pasta and the rest of the cheese. Add Parmigiano cheese overtop. Bake at 400 F for 15-20 minutes. Broil for 2-3 minutes to crisp the top.
