The Great Depression lasted from 1929 through the 1930s, and for many American families, stretching what was already in the pantry became a way of life. Recipes like Water Pie are remembered as part of that tradition of “make do” cooking. There’s no fruit filling or rich custard here. Water is poured directly into the pie crust, then flour, sugar, butter, and a little vanilla transform it into a sweet filling as it bakes. And here’s a piece of Depression era history I find fascinating: food wasn’t always scarce because it didn’t exist. Many farmers were still producing food, but falling prices, unemployment, poverty, drought, and displacement meant millions of Americans simply couldn’t afford or reliably access what they needed. That’s part of why thrift and using every available ingredient became so deeply ingrained in kitchens of the era.
