@pitlanepod: Everytime I think back to the Barcelona GP I have to remind myself that it wasn’t a dream. Hopefully one day I’ll be in the paddock much more regularly, and with a media pass instead of a paddock pass 🤞🏻 #queerjoy #transftm #motorsports

Finding my favourite food in the Bible EP4: Genesis 27 - Esaus Game . INGREDIENTS * 1 kg venison shank, bone in, whole * 2 tsp salt * 3 tbsp olive oil * 1 onion cubed * 3 garlic cloves, crushed * 2 thyme sprigs * 1 tsp cumin * 1 tsp coriander * 200ml red wine * 500ml water or light stock * 1 teaspoons red wine vinegar * 4 flatbreads, to serve METHOD 1. Pat shank completely dry, rub salt all over, and leave uncovered for 40 minutes 2. heat olive oil in a heavy casserole pot big enough for the shank and brown it on every single side, including the ends 3. lift the shank out and place it on a wire rack. Then drop the heat and add onion, garlic, and carrots and cook until soft 4. then add your thyme along with your ground spices and meat. 5. Pour in the wine and let it bubble hard until reduced by half and it stops smelling like wine. 6. Place the shank back in and add water until it comes three-quarters the way up. Cover with a lid and then put it in the oven for 4 hours at 150°C. 7. Serve. Lift the shank onto a warm plate and reduce the juices on the hob until glossy and then stir in vinegar and the last of the salt. 8. Serve it on the bone with the sauce and on two flatbreads. WHY I MADE IT LIKE THIS * It’s actual venison this time, not a stand-in. The word in the text is tzayid, hunted game, so I wanted the real thing. * Browned way harder than feels right, because venison has basically no fat on it. The crust is where all the flavour has to come from. * Liquid three quarters of the way up, which is higher than I’d normally go, because a shank is tall and lean and the top dries out otherwise. * Vinegar right at the end because lean game goes flat without acid. * The braise is my call. Genesis 27 doesn’t name a cooking method at all, it just says she made savoury food. Everything past that is me! . #bible #jesus #Genesis #esau
