🍲🧀 COZY LASAGNA SOUP 🧀🍲 All the cheesy, saucy goodness of classic lasagna turned into the coziest bowl of soup! This is one of those easy comfort-food dinners that’s perfect for a chilly night. ❤️ The best part is that everything comes together in one pot, and that big scoop of creamy ricotta on top makes it SO good! Ingredients — Serves 4–6 * 2 tablespoons butter * 1 medium yellow onion, diced * 4 cloves garlic, minced * 1 lb ground beef * 3 tablespoons tomato paste * 1 can (15 oz) tomato sauce * 5 cups chicken broth (or use a combination of chicken and beef broth for a richer flavor) * 1 teaspoon salt, plus more to taste * ½ teaspoon black pepper * 1 teaspoon garlic powder * 1 teaspoon onion powder * 1 teaspoon Italian seasoning (optional) * ¾ cup heavy cream * 8 lasagna noodles, broken into small pieces * 1½ cups shredded mozzarella cheese * ¾ cup freshly shredded Parmesan cheese, plus extra for serving * 1 cup ricotta cheese, for serving * Fresh parsley, finely chopped, for garnish Directions 1. Melt the butter in a large soup pot or Dutch oven over medium heat. Add the diced onion and sauté for about 4–5 minutes, until softened. Add the garlic and cook for another 30–60 seconds until fragrant. 2. Add the ground beef and cook until completely browned, breaking it apart as it cooks. Make sure to carefully drain off any excess grease before continuing. You can also cook the ground beef separately, drain it really well, and then add it to the soup if you want to make sure your broth doesn’t get greasy. 3. Add the tomato paste directly to the beef and onions. Stir everything together and let the tomato paste cook for about 1–2 minutes. This little extra step helps deepen that rich tomato flavor! 4. Pour in the tomato sauce and stir until everything is combined. Add the chicken broth. For an even richer, beefier flavor, you can replace a cup or two of the chicken broth with beef broth. 5. Season with salt, black pepper, garlic powder, onion powder and Italian seasoning if using. Bring everything to a gentle simmer and let it cook for about 5 minutes. 6. Stir in the heavy cream. Break your lasagna noodles into small pieces before adding them to the pot. Remember, they’ll get much bigger as they cook! Add the noodles and simmer according to the pasta package directions, stirring frequently so they don’t stick together or to the bottom of the pot. 7. Once the noodles are tender, lower the heat and stir in the shredded mozzarella and Parmesan. I like to add LOTS of cheese here! 🧀 Stir until everything is melted, creamy and delicious. If the soup gets thicker than you’d like, simply add another splash of broth. 8. Ladle the hot lasagna soup into bowls and finish each one with a generous scoop of ricotta cheese right in the center. Sprinkle with extra freshly grated Parmesan and chopped parsley. That scoop of ricotta slowly melting into the hot, creamy tomato broth is EVERYTHING. 😍🍅🧀 It tastes like a big cozy slice of lasagna without all the layering and baking!
