COTTAGE PIE✨ for the girls who want a proper cosy dinner without making life difficult🍂🫶🏼 Rich, saucy beefy filling, fluffy mash, crispy golden peaks and a little bit of red wine stock because apparently we’re fancy now x This makes a BIG cottage pie perfect for leftovers!  Ingredients (serves 6-8) •750/800g beef mince • 1 onion  • 2 carrots  • 2 celery (I used a frozen mix) • 2-3 garlic cloves (I used lazy garlic) • 2 tbsp tomato purée • 1 tbsp Worcestershire sauce • 1 red wine stock pot • 1 beef stock cube • 1 tsp dried thyme • 600 ml water • 1–2 tbsp gravy granules, as needed • Salt & plenty of black pepper • mash  • cheese for on top!! 👩🏼‍🍳 1. Brown your mince, add salt & pepper 2. Add the frozen onion, carrot & celery mix and cook for around 5 minutes until softened. 3. Stir in the lazy garlic and tomato purée and cook for another minute. (Let your tomato puree colour deepen) 4. Add the Worcestershire sauce, thyme, the red wine stock pot & beef stock cube in around 500ml water and stir everything together.  5. Bring to a gentle simmer and let it bubble away for around 10–15 minutes so the flavours get all cosy. 6. Add gravy granules gradually, stirring as you go until the filling is rich and thick. You want it saucy (not watery)  7. Spoon on your mash & use a fork to mark it (this gives the nice crispy edges)  8. Grate some cheese on top! 9. Bake at 200°C for around 25–30 minutes or until bubbling around the edges and beautifully golden on top. Give it a few extra minutes under the grill if you want it extra crispy. 10.
