Sri Lankan Banana Fritters Banana fritters are enjoyed in many countries, each with its own delicious version and name, including Puff-Puff, Loukoumades, Pazham Pori, Vaipan and many others. This is my Sri Lankan-style version, made with ripe banana, flour and a few simple ingredients. The fritters turn beautifully golden on the outside while staying soft and delicious inside. They make a lovely breakfast or afternoon tea treat and are best enjoyed warm, either plain or lightly dusted with icing sugar. If you do not have self-raising flour, you can use 1 cup of plain flour with ½ teaspoon of baking powder. Fry over medium heat to help the fritters cook through evenly without becoming too dark. Ingredients 1 overripe banana 1 cup self-raising flour 2 tbsp desiccated coconut ½ cup sugar, adjusted according to the sweetness of the banana ½ tsp vanilla essence or cinnamon powder or cardamom powder A pinch of salt 1–2 tbsp milk, only if needed Oil, for deep frying Method Break the banana into two pieces and place it in a mixing bowl. Add the self-raising flour, desiccated coconut, sugar, a pinch of salt and your choice of vanilla essence, cinnamon powder or cardamom powder. Using your hands, mash the banana and mix everything together until well combined. Do not use a blender. Check the sweetness of the mixture. Depending on the sweetness of the banana, add another 1–2 tablespoons of sugar if needed. The moisture from the banana should be enough to bring the mixture together. If it is too dry, gradually add milk, 1 tablespoon at a time. The dough should be thick and sticky, not runny. You should be able to take a small portion with a wet hand and easily drop it into the hot oil. This is the right consistency. Heat the oil over medium heat. Lightly wet your hands with water, take a small portion of the dough and gently shape it into a small ball. Alternatively, squeeze a small portion between your thumb and index finger and drop it directly into the hot oil.
