Since opening in 2021, the stall has welcomed many visitors from Japan and abroad. The stall was renovated in summer 2026. It retains its traditional look while adding a built-in noodle boiler for easier cooking in the limited space. Counter seats offer an up-close view of each bowl being prepared. Featured here is the chashu ramen. Clear, additive-free, no-MSG soy sauce soup is paired with medium-thin straight noodles from Tamura Seimen. Chopped onion, spinach, nori and house-made chashu cover the bowl. The chopped onion’s texture and sweetness enhance the soy sauce soup’s animal and seafood umami. The moist, tender chashu brings savory meat flavor and sweetness from the fat. Hachioji ramen is still carefully prepared one bowl at a time at the renewed stall.
