Cuban Black Beans 🇨🇺 These are rich, flavorful, and the perfect side to any Cuban meal! Ingredients • 14 oz bag of black beans • 1/2 green bell pepper • 1/2 red bell pepper • 1 whole yellow onion • 4–5 garlic cloves, minced • 2 bay leaves • 3 tsp salt (divided) • 1 tsp oregano • 1 tsp cumin • 1 tsp sugar • A couple dashes of red wine vinegar • 1/4 cup vino seco • Olive oil Directions 1. Rinse the black beans and add them to a pressure cooker. Cover with water and add the 1/2 green pepper, 1/2 onion, and 2 bay leaves. Pressure cook for 35 minutes, then allow the pressure to naturally release for 15 minutes. 2. Remove the bay leaves. Scoop out a small amount of the cooked beans along with the onion and green pepper, then mash everything together. Set aside—this helps naturally thicken the beans. 3. In a pan, heat a little olive oil and sauté the diced onion, red bell pepper, and garlic until softened. Stir in the oregano, cumin, and 1 tsp of the salt. 4. Add the sofrito to the beans along with the vino seco, red wine vinegar, remaining 2 tsp salt, sugar, and the mashed beans. 5. Simmer until the beans reach your desired consistency.
