These are incredible alongside a lovely glass of Trapiche Uco Valley Malbec, which is currently new and on offer in @tesco if you purchase 6 bottles. It’s a really delicious red wine and I wanted to pair it with the flavours of my favourite British Indian restaurant and show how easy it is to cook incredible food at home. Tandoori Lamb Chops (serves 6) 12 thick cut French trimmed lamb Chops approx. 900g 1 tbsp. garam masala 1 tsp. turmeric 1 tsp. salt 2 tsp. dried fenugreek leaves 1 tsp. dried mint ½ tsp. red food colouring (optional) 2 tbsp. garlic and ginger paste 2 tbsp. mint sauce 100ml natural yoghurt Coriander Mint Dressing: 1 small bunch of fresh coriander 2 green chillies deseeded 2 cloves of garlic ½ tsp. freshly ground coriander ½ tsp. freshly ground cumin 1 tsp. sugar 2 tbsp. mint sauce 150ml natural yoghurt Method: 1: Marinade the chops in a bowl, along with rest of the ingredients. Leave to stand for a couple of hours if you have time. 2: To make the dressing, blitz up all of the ingredients until smooth. Then chill in the fridge until needed. 3: Thread the chops onto skewers then cook over some hot coals on the BBQ for 5-6 minutes, turning from time to time. I like mine caramelised but still pink on the inside. Serve with a drizzle of the coriander and mint dressing, some kachumber salad and a lovely glass of Trapiche Uco Valley Malbec.
