@brynn_ann: Stages of Sourdough Bulk Fermentation Step-by-Step Guide ⏰ TIMESTAMPS: I included timestamps so you can see how my dough progressed, but they are just a reference, not a schedule. Your dough may move faster or slower. 📌 SIGNS TO LOOK FOR: • The dough increases in volume • Bubbles form on the surface + throughout the dough • A rounded/domed top • The dough becomes lighter + airier • A jiggle when you move the bowl • The dough becomes smoother, stronger and easier to handle 📌 IMPORTANT NOTES: ✨ Bulk fermentation starts as soon as you add your starter to the dough. ✨ Things that impact your bulk fermentation time: starter strength, starter amount (in dough), temp. of your environment, flour type and dough hydration. The more you practice and actually watch how YOUR dough changes, the easier it gets💛 #sourdough #sourdoughstarter #sourdoughbread #sourdoughbaking #sourdoughtips

I want to make sure I understood… you wait an hour after making your dough before starting the stretch and folds?

How do you strengthen your starter? I feel like mine is strong it doubles and is full of bubbles every time I feed it. It looks really strong but when I bulk ferment it never works. I get bubbles throughout and it rises some but it never gets airy and jiggly or comes away from the bowl on its own. When I bake my bread it’s close but still dense and gummy.

My dough has never gotten super puffy and airy like everyone’s online but it somehow turns out good every time 😭 I don’t understand bulk fermentation fully but I guess I’m doing something right

Whenever I try a higher hydration (I usually do a 64/66%) like 68% it just sticks to my counter and I have to turn it into a focaccia. No matter how much time I give it, it just doesn’t work

If none of this happens is there a way to fix it or should I just start over?

Great tips. If I had seen this sooner and realized it was my weak starter, it would have saved me so much time, flour and frustration.

How much do you mix your dough initially? Mine definitely doesn’t look like that consistency and I follow your recipe

So I’m confused on the house temp…I live in Texas where it’s been 105 degrees everyday for a month…but I keep my AC at 65…so the house is cold…is there a difference between outside and inside temps?

My starter has whole wheat in it, but I don’t use whole wheat in my dough. It is never this easy, but I’m definitely doing all these things. Like it’s very sticky at all stages. Is the whole wheat the culprit?

When you say 5 to 5.5 hours are you counting that from the moment you mixed it and bulk fermentation starts or from after all of your stretch and folds?
