Try melting down a couple tablespoons of butter first, then adding a couple tablespoons of flour to make a roux and whisking until it just starts to brown. Then reduce to low heat and slowly start adding the milk while whisking, then once it's smooth start adding the cheese a bit at a time while stirring until it's all melted in. A cheat you can use as well is skipping the butter flour and milk part and just start with a premade alfredo sauce, and add as much cheese as you like🤷🏻
