Earl grey pastry cream recipe🫶This makes enough to fill two tarts or several layers of a full-size layered cake! Start with 7 egg yolks, about 3/4 cup sugar, and a splash of vanilla whisk until creamy. In a saucepan, heat up 1 cup milk + 1 cup heavy cream with the inside of 3 Earl Grey tea bags. Let it steep and get nice and fragrant—don’t rush this part. While you wait whisk 6 tablespoons cornstarch with 4 ish tablespoons of milk (this is what gives you that thick, silky texture). Whisk the cornstarch mixture with the eggs. Slowly pour the hot milk into your egg mixture while whisking (temper it so you don’t scramble the eggs ). Once combined, pour everything back into the pan and cook on medium, whisking constantly, until thick and glossy. When it’s there, take it off the heat and place in a bowl. Cover with plastic wrap directly on the surface and chill overnight.
