My mom was a very good southern cook who cooked many a pot of delicious dry beans. She never soaked them overnight.

The great thing about a recipe is we can all make it to fit how we individually like. We all use different methods. Even though I am 53, and have been cooking since I was old enough to stand on a stool next to my Nannie, I learn so much still to this day from watching others. In fact, I have learned things from you that I now prefer doing over how I have always done them prior. Btw, my mom always called an envelope too. I hope you have a great day. 🩷

If you do soak your beans overnight, you’re getting more benefit from the beans itself. I didn’t read all the comments to see if somebody told you that I didn’t know if you knew that that’s why we soak them overnight so they’ll sprout and you get more benefit healthwise from them

There cajun restaurant in my area that has fabulous red beans. I had a convo with the chef about how he gets them so creamy. Are you sitting down? Some ladies might need to clutch their pearls. He adds a stick of salted butter to the pot!

Everyone cooks differently. I salt at the end. Salt draws out water. We cook chicken in our because everyone cooks different
