@calcookz: Welcome back to Sessions With Auntie: Episode 4! 🤩🇬🇭 Today I’m with a very special Ghanaian Auntie: Auntie Monika also known as @aduane.uk Today she taught me how to make a Ghanaian favourite - Waakye! Now this method and the ingredients used definitely caught me by surprise, we used dawadawa, a different type of rice I’ve never heard of! and we didn’t use bicarb of soda for the colour. Here’s the recipe we used: 4 cups Black eye beans 6 cups brown rice Fresh Tomatoes Bell peppers Onions Garlic Ginger Scotch bonnet Tomato puree Vegetable oil Shea butter (optional) Cumin seeds Fennel seeds Star anise Nutmeg Rosemary Bay leaf Dawadawa Water Waakye leaves ( sorghum leaves) Eggs (not optional ) Spaghetti Gari For the chicken stew: 1 cup of water (not one litre lol) 2 red onions chopped 1/4 cup tomato paste Onion Mixture of 1 red onion, 1 scotch bonnet, 1 tbsp each ginger and garlic) Red pepper mixture - 1 roasted red pepper, carrot and white onion 4 chicken thighs 2 tbsp all-purpose seasoning (we used Monika’s special mixture 2 tbsp oil 1 tsp salt #AfricanFood#cookingtok#auntie#waakye#ghanaianfood
