@geoff.garlic: Is this the best dish in the world? 🧐 SALTAH (Yemeni beef stew) 🇾🇪 INGREDIENTS Zhug (green hot sauce) - 1/2 tsp cumin seeds - Seeds from 3 cardamom pods - 1/4 tsp ground black pepper - 1/4 tsp coriander seeds - 4 tsp crushed garlic - 4 green chillies - Salt to taste - Parsley + coriander (roughly 1 cup total) - Olive oil (till desired consistency) Saltah - 1kg (2.2 lb) beef chuck - 500g (1 lb) baby potatoes - 2 tomatoes, chopped - 2 onions, chopped - 1 tbsp ground black pepper - 1 tbsp turmeric - 1L (4 cups) beef stock - 2 eggs, beaten - 2 tbsp chopped parsley/coriander mix - Salt to taste Foam - 50g (1/4 cup) fenugreek seeds METHOD 1. The night before: soak the fenugreek seeds in hot water to take the bitterness out. 2. Heat oil in a heavy pot. Brown the beef, then set aside. 3. Sauté the onions with a pinch of salt. 4. Add tomatoes, black pepper and turmeric. 5. Return the beef, pour in the stock and scrape the bottom of the pot. 6. Cover and cook 45 min, stirring occasionally. 7. Meanwhile, grind everything for the zhug in a mortar and pestle. 8. Drain the fenugreek, grind it in the mortar and pestle, add fresh cold water and let it soak. 9. Add potatoes to the stew, cook another 25 min (or till fork tender). 10. Drain excess water off the fenugreek, then whip with cold water till foamy. 11. Stir chopped herbs, beaten eggs and some zhug through the stew. 12. Serve with fenugreek foam and extra zhug on top. #homecooking #middleeasterncuisine #yemenifood #saltah

I think your rating is inaccurate because you only take the taste of the food into consideration while ignoring its nutritional value. Of course, fried food may taste better, but it has less nutritional value. I think you should consider the nutritional value alongside the taste when rating food.
