Add the cold butter and cut it into the flour with a pastry cutter or your fingertips until pea-sized pieces remain. 3. Gradually add the ice water, 1 tablespoon at a time, mixing gently until the dough just comes together. Do not overmix. 4. Divide the dough into two portions, with one slightly larger for the bottom crust. Shape into disks, wrap, and refrigerate for at least 1 hour. Apple Filling: 1. Peel, core, and slice the apples to your preferred thickness. 2. Melt the butter in a saucepan, then add the apples, sugar, cinnamon, nutmeg, salt, and lemon juice. Mix well. 3.
