Sweet Potato Cheesecake Cheesecake mixture * 3 (8 oz) packages cream cheese, room temperature * 3 large eggs, room temperature * 3/4 cup granulated sugar * 1 tablespoon vanilla extract * 1/4 cup sour cream Sweet potato mixture * 4–5 sweet potatoes or yams, about 2 cups mashed * 2 large eggs, room temperature * 3/4 cup granulated sugar * 1 cup sweetened condensed milk * 1 tablespoon vanilla extract * 1 1/2 teaspoons cinnamon * 1/2 teaspoon nutmeg * 1/3 cup melted butter Plus * 2 premade pie crusts Assembly Mix the cheesecake filling until smooth. In a separate bowl, make the sweet potato filling. Divide the cheesecake mixture between the two pie crusts, saving some for the top. Add the sweet potato mixture evenly over the cheesecake layer. Spoon or swirl the remaining cheesecake mixture over the top. Bake at 350°F for 35–40 minutes, until the filling is set and the crust is golden.
