Quick and easy dinner idea: Japanese curry using the golden curry packet! It’s so delicious and a great dinner option for a busy weeknight. You will need : 3.2oz packet Golden Curry Japanese curry mix (Mild) 3 cups water 5 potato potatoes 2 large carrots 1 medium onion 5 hard boiled eggs (optional) 3 garlic cloves 2 Tbs neutral oil Cooked basmati rice I like to do everything at once so I don’t waste time. 1. Start cooking basmati rice per package instruction. 2. Boil eggs until they are hard-boiled. Peel and cut in half. 3. Meanwhile, peel and chop potatoes into 8ths. Cut the carrots into 1/4 inch slices. Diced the onion. Minced the garlic. 4. To a wok or a pot add oil, potatoes, carrots, onion, and garlic. Sauté five minutes. 5. Pour in 3 cups water. Bring to a boil and allow to cook for 15 minutes, covered on low heat. 6. Break the curry mix into chunks(use the whole box) and add to the pot. Mix continuously for 5 mins. Gently add in boiled eggs.
