Sri Lankan Patties Recipe Sri Lankan patties are a very famous and much-loved savoury snack in Sri Lanka. They have a crispy, golden pastry shell and can be filled with fish, tuna, chicken, or simply potatoes. In Sri Lanka, patties moulds are commonly available in most shops and make it easy to shape and seal the patties. If you don’t have a mould, you can use a round cutter to cut the dough into circles. Add your favourite filling, fold the dough over, and press the edges with a fork to seal. The oil should be hot enough to create bubbles, but not so hot that the patties burn before the dough cooks properly. Fry until golden and crispy, then remove and drain well.
