🥩🍤 Cajun Steak & Shrimp Loaded Baked Potatoes 🥔🔥 These loaded baked potatoes are packed with juicy Cajun steak bites, buttery garlic shrimp, melted cheese, and a creamy Cajun sauce. Crispy on the outside and fluffy inside, they make a colorful, indulgent dinner that looks especially good in photos. Ingredients For the Potatoes • 4 large russet potatoes • 2 tbsp olive oil • 1 tsp kosher salt For the Steak • 1 lb sirloin steak, cut into bite-size pieces • 1 tbsp olive oil • 1½ tsp Cajun seasoning • ½ tsp garlic powder • ½ tsp smoked paprika • Salt and black pepper to taste For the Shrimp • ¾ lb large shrimp, peeled and deveined • 1 tbsp butter • 2 garlic cloves, minced • 1 tsp Cajun seasoning • 1 tsp fresh lemon juice For the Creamy Cajun Sauce • 2 tbsp butter • 3 garlic cloves, minced • ¾ cup heavy cream • ½ cup chicken broth • ¾ cup freshly grated Parmesan • ½ tsp Cajun seasoning • ¼ tsp smoked paprika For Loading • 1½ cups shredded cheddar cheese • ½ cup sour cream • 3 green onions, sliced • ¼ cup chopped parsley • Extra Parmesan, optional Instructions 1. Preheat the oven to 425°F (220°C). 2. Scrub and dry the potatoes. Rub them with olive oil and sprinkle with kosher salt. 3. Place directly on a baking sheet and bake for 50–60 minutes, until crispy outside and tender inside. 4. Meanwhile, pat the steak dry and season with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper. 5. Heat olive oil in a large skillet over high heat. Add the steak in a single layer and sear for about 2 minutes per side until deeply browned. Remove and set aside. 6. Reduce the heat to medium-high and melt 1 tablespoon butter in the same skillet. 7. Add the shrimp and Cajun seasoning. Cook for about 1–2 minutes per side. 8. Add the minced garlic and lemon juice during the final 30 seconds. Transfer the shrimp to a plate. 9. For the sauce, melt 2 tablespoons butter over medium heat. 10. Add the garlic and cook for 30 seconds. 11. Pour in the heavy cream and chicken broth. Simmer gently for 2–3 minutes. 12. Stir in Parmesan, Cajun seasoning, and smoked paprika. Continue cooking until smooth and creamy. 13. Slice each baked potato open and gently fluff the inside with a fork. 14. Sprinkle cheddar cheese inside each hot potato and allow it to melt. 15. Load generously with the Cajun steak bites and garlic shrimp. 16. Spoon the creamy Cajun Parmesan sauce over everything. 17. Finish with sour cream, green onions, parsley, and a little extra Parmesan. Serving Suggestions Serve with roasted broccoli, grilled corn, asparagus, or a crisp garden salad.
