I have a new respect for the Michelin Guide. It was very good of them to come out and explain their criteria and what had happened. I bet it made for a better restaurant because Prue got her star.

I thought everyone in the industry knew that’s what the MG was about? I never liked Prue Leith she’s always seemed like a typical restaurant owner - ‘the chef doesn’t already have enough work to do so he can make the bread’. Good on the chef.

Inconsistency is one of my bugbears when it comes to restaurants. The standards are that of the restaurant, not the chef who happens to be on shift that day.

there is a restaurant in Denmark called "udtryk" who received a Michelin star 41 days after opening (5 weeks). So it seems like the consistency criteria doesn't appear to be consistent among michelin inspectors in different countries.

That explains it! A michelan star worthy restaurant would lose a baker and hire another baker immediately. They wouldn't risk sacrificing consistency and quality like that. It's great that she pushed to know what the failings were so she could make changes if she wanted to!
