@celines_eats: vg sausage & greens lasagne 🌱 so so yummy!! I used homemade pesto (have posted my recipe before just message me if you want that recipe) but you can use shop bought if you cba on top of all the other elements!! recipeeee: 1. chop up a couple courgettes and leeks, pop in the oven to roast with olive oil and plenty of salt on about 175-180c for 40 mins or so (I salt and dab the courgette with kitchen towel to soak up some of the excess moisture before cooking) 2. slice and cook off a large onion on a low-medium heat for 20 mins or so, then go in with some garlic (measure with your heart xo) and 6 crumbled vegan sausages (remove the skins and break them up) 3. make a bechamel - butter, flour, unsweetened soy or almond milk and lots of nutritional yeast with some lemon zest, seasoned to taste (pls don’t use oat milk etc in cooking if you can avoid it - I looove it for hot drinks/baking but it’s pretty sweet so it’ll affect the flavour of your food!) 4. layer up with lasagne sheets! I did 3 main layers, the roasted veg on the bottom and top with the sausage/caramelised onions in the middle! 5. Start with your veggies, then cover in bechamel and mix in some blobs of pesto, then a layer of pasta and repeat with the sausage/onion layer and more bechamel and pesto, then a final veggie layer, then pasta on top of pour over the remaining bechamel and mix some pesto on the top 6. pop it in the oven for 45 mins to an hour on 180c, or until golden brown and the pasta is cooked through #veganfood #plantbased #EasyRecipes #mealprep #healthyfood
