Over time this selected for the tastiest, biggest and easiest to grow plants. But there’s a problem. As we selectively bred plants for taste and size and carefully tended to them, weeding, watering and feeding them, we forgot something important: Nutrition. As we breed plants to be bigger and tastier we increase their water and sugar content. This was fine for a long time. Sure, cultivated plants lost some nutrients compared to their wild counterparts, but they were still grown naturally in active healthy soils fed by compost and other natural methods. But then came the ‘Green Revolution’. Industrialization of farming led to increased yields, but at a huge cost. Our fruits and vegetables have been steadily declining in nutrient and mineral quantity since the 1950s. We’re using more fertilizers and more pesticides every single year. And yet, nutrients and minerals are going down. Read that again: fertilizer usage goes up. Nutrients go down. Are you okay with that? I’ll be talking a lot more about this and what we can do about it, but eating wild plants and learning about the wild plants in your local area is a great step in the right direction. Wild plants generally have more trace minerals than conventionally-grown, industrially-farmed vegetables.
