INGREDIENTS: ● 2 slices of toast bread ● 2–3 eggs ● 2 slices of tomato ● 2 slices of cheddar cheese ● 1–2 lettuce leaves ● 50–70 g lightly salted salmon, trout or other ready-to-eat salted fish ● Vegetable oil — for frying ● Salt — to taste INSTRUCTIONS: 1. Lightly grease a skillet with vegetable oil. 2. Beat 2–3 eggs with a little salt and pour the egg mixture into the skillet. 3. While the egg mixture is still runny, place two tomato slices on top. 4. Place one slice of toast over each tomato slice. 5. Once the egg mixture is cooked, carefully flip everything with a spatula so the bread is on the bottom. 6. Fold the edges of the omelet inward, shaping them to fit the two slices of toast. 7. On one half, place a slice of cheddar cheese, 1–2 lettuce leaves and several thin slices of lightly salted salmon or trout. 8. Add another slice of cheddar cheese on top and fold the other half of the omelet over the filling. 9.
