@welcometoangieskitchen: Jalapeño Cheese Bagels / Ingredients: For the dough: - 500g bread flour (4 cups) - 280g lukewarm water (1 cup + 3 tablespoons) - 30g granulated sugar (2 tablespoons + 1 teaspoon) - 7g instant dry yeast (2 teaspoons + 1/4 teaspoon) - 10g fine sea salt (1 teaspoon + 3/4 teaspoon) - 35g jalapeños peppers, chopped up (1/4 cup) - 80g cheddar cheese, shredded (3/4 cup) - 80g vintage cheddar cheese, shredded (3/4 cup) Extras: - Egg wash, for brushing before baking - More shreded cheese, for topping before baking - More jalapeños, for topping Instructions: 1. First prepare the dough. 2. In a large bowl, whisk together the flour, salt, sugar and yeast. Whisk in the shredded cheese and chopped jalapeño, then pour in the water. 3. Knead the dough: Using a stand mixer fitted with the dough hook or your hands, knead the dough until it becomes smooth and forms a ball. 4. Place the dough in a clean, oiled bowl, then cover the bowl and let it rise at room temperature until doubled in size, about 2 hours. 5. Once the dough has doubled in size, divide it into 10 equal portions. Each piece should weigh approximately 100g. 6. Shape the bagels: There are two easy ways to shape your bagels: 7. Finger Method: Shape each piece of dough into a smooth ball, then use your finger to poke a hole through the center. Gently stretch the hole until it is about 2–4 cm wide. The dough will spring back slightly, so make the hole a little larger than you want it to be after boiling and baking. 8. Rope Method: Flatten each ball into a small rectangle, then roll it tightly into a rope, pinching the seam to seal it. Flatten one end of the rope, brush it lightly with water and wrap the rope into a circle. Place the flattened end over the other end and pinch firmly to seal. This method creates a more uniform, classic bagel shape. 9. Place the shaped bagels on a baking tray lined with parchment paper. Cover them loosely and let them rest while you prepare the toppings and bring the water to a boil. 10. Prepare the water: Bring a large pot of water to a boil. 11. Preheat your oven to 200°C (400°F). 12. Boil the bagels: Carefully place the bagels into the boiling water, working in batches. Boil for about 1 minute on each side. 13. Place the boiled bagels back onto the parchment-lined baking tray. Brush the tops with egg wash, then sprinkle with additional shredded cheese and jalapeños on top. 14.
