Only the very top layer was dry.⁠ ⁠ What West-Flemish farmer Diederik Steyaert tells us:⁠ ⁠ 𝐇𝐨𝐰 𝐡𝐞 𝐤𝐞𝐞𝐩𝐬 𝐭𝐡𝐞 𝐰𝐚𝐭𝐞𝐫 𝐢𝐧 𝐭𝐡𝐞 𝐬𝐨𝐢𝐥⁠ • He never ploughs⁠ • He keeps adding organic material⁠ • What most people call weeds, he treats as storage capacity for water⁠ ⁠ 𝐓𝐡𝐞 𝐭𝐫𝐢𝐜𝐤 𝐰𝐢𝐭𝐡 𝐭𝐡𝐞 𝐠𝐫𝐚𝐬𝐬⁠ He piles up plain grass and lets it sit for one to two years.⁠ • The rain soaks in and stays trapped inside the pile⁠ • After two years it becomes dark, decomposed material⁠ • No manure, just pure grass, low in nitrogen and rich in carbon⁠ • He spreads that carbon over the soil, and it holds the moisture through winter⁠ ⁠ 𝐓𝐡𝐞 𝐧𝐮𝐦𝐛𝐞𝐫𝐬 𝐭𝐡𝐚𝐭 𝐬𝐭𝐨𝐩𝐩𝐞𝐝 𝐦𝐞⁠ Every 1% of organic matter lets the soil hold around 160,000 liters of water per hectare.⁠ ⁠ • On rich ground that means close to a million liters per hectare⁠ • He farms 11 hectares⁠ • That's roughly 11 million liters of water buffered in the soil, waiting for his crops⁠ ⁠ 𝐀𝐧𝐝 𝐭𝐡𝐞𝐧 𝐭𝐡𝐞𝐫𝐞'𝐬 𝐭𝐡𝐞 𝐣𝐮𝐧𝐠𝐥𝐞⁠ He calls one plot the jungle. Every ten years he lets a field lie fallow and simply allows whatever wants to grow to grow.⁠ ⁠ This is what healthy soil actually does. It drinks when it rains and holds on for the dry months. No hose, no irrigation bill, no panic in a heatwave.
