At my old restaurant for family meal everyone always asked me to do my breakfast sandwiches. It was a half chorizo, half breakfast sausage patty that was topped in red chile as it cooked. I sauted onions with garlic and spinach and put a green Chile jam on the side to pour over with each bite. Absolutely delicious

that’s not the right chorizo for this type of recipe. you want more of a coarse grind like typical sausage. even try making your own.
