Mrs. Wages products take all of the guess work out of canning things. Their pickle flavor is not like Mt. Olive, but they aren't bad either. If you do feel brave, then my recommendation is to start here.
Also, save that pickle juice from that jumbo jar and put things in it that you'd like to pickle. Anything other than a cucumber will obviously change the flavor of the pickle juice, and the saltiness may change.

They should put it on the package. That’s very concerning.

These are the ingredients for the Mt. Olive Simply Pickles Kosher Petite Dills. They have a good crunch and flavor, if they sell these near you.

so as you're aware, pickles are made with vinegar, vinegar kills the bacteria. I respect you staying away from canning. I only mention this to add that you can make your own fridge pickles. or pickled salads. it's slicing, maybe ice bath, and a vinegar solution, and leave it in the fridge overnight type of recipes, no canning involved. but if you're not one to be able to make brownies from a box, I respect you staying away from such things.
maybe you have a skill that you can trade a local pickle canning person for pickles? bartering for the win 😉

I have a certificate in Sensory and Consumer science and I am constantly telling people that our perception of bitter can vary and that people should have grace with their children when it comes to food preferences. I am also a genetic taster of bitter compounds.

I was just eating pickles and I thought of you. do you have a whole foods near you? the pickles on the olive bar are very crisp and small, they are not sweet like gherkins and I think you might really like them. if you try them- the bean salad is also very good there.

I have fallen into this rabbit hole and I hope they listen! storytime: I actually live about 30 minutes from Mount Olive and I once worked at Mt Olive Pickles over the summer when I was in college. (I would put the pickles in the jar hehe). Funny enough, I actually hated pickles but I thought it was pretty interesting seeing sooo many jars in the warehouse. it was 2018 at the time and they had jars that didn't expire till 2023

honestly I've seen a lot of these pickle videos of yours and I'm kinda invested, despite being across the pond in England. I'm curious though, if it's a ingredient change on a USA brand, would exploring maybe Canadian brands be a option? I only assume they changed the preserve because USA is kinda gross with it's chemicals in foods so I wonder if a outside source be better or worse?

thank you thank you for pointing out kids have more taste buds, to trust your kids! (that being said, what I do with my kids is to tell them they have to try a new food multiple times because it takes multiple exposures for your taste buds to learn a new type of flavor... I want my kids to be willing to try new foods but also trust their judgment on what is good or bad tasting to them)
there are many times I wonder if a processed food tastes different than it used to, a chemical element to it for example, I ask my kids and trust their judgment. we regularly buy packaged food that is a normal purchase, then end up throwing it out and never buying it again... like cheetos, I used to love cheetos but they are gross now...
