Ingredients: - 1 lb (450g) ground turkey - 2 cups fresh spinach, chopped - 2 cups cooked leftover rice - 2 large carrots, diced - 1 cup celery tops, chopped - 4 cups low-FODMAP chicken broth (ensure allergen-free) - 2 tablespoons olive oil - Salt and pepper to taste - Gluten-free bread slices (optional, for serving) Instructions: 1. Set the Instant Pot to sauté mode. Add olive oil and cook ground turkey until browned and cooked through, about 5-7 minutes. 2. Add diced carrots and celery tops to the pot. Sauté for another 3 minutes, stirring occasionally. 3. Pour in the low-FODMAP chicken broth. Scrape any browned bits from the bottom of the pot. 4. Add the cooked rice and chopped spinach. Stir well. 5. Seal the lid, set the valve to sealing, and cook on high pressure for 5 minutes. 6. Once done, quick release the pressure carefully. Season with salt and pepper to taste. 7.
