@esyfilms: Save this crispy salmon ochazuke before the next pregnancy craving hits. - This salmon ochazuke, Japanese tea rice, combines hot rice, crispy salmon and a light green tea dashi broth in one comforting bowl. The important part is seasoning the broth gradually because the anchovy dashi and tuna fish sauce already bring plenty of savoury flavour. Keep it light and you can still taste the tea, furikake and salmon in every spoonful. 📍Ingredients: • Salmon fillet, 200g • Green tea bags, 2 • Water, 500ml • Anchovy dashi coin, 1 • Tuna fish sauce, 2 TB • Cooked rice, 1 bowl • Furikake, 2 TB • Spring onion, chopped, for sprinkling • Sesame seeds, for sprinkling • Salt, a pinch Instructions: 1. Sprinkle the salmon with a pinch of salt. 2. Place it skin-side down in a hot pan and cook until the skin turns crispy. Turn and cook the remaining sides until browned and the salmon is thoroughly cooked with no red or translucent centre. 3. Add 500ml water, 2 green tea bags and 1 anchovy dashi coin to a pot, then bring it to a boil. 4. Add 2 TB tuna fish sauce. Taste the broth before adding any more salt because the dashi and fish sauce already provide seasoning. 5. Add 1 bowl of hot cooked rice to a serving bowl and sprinkle over 2 TB furikake. 6. Place the crispy salmon on top, then pour in the hot green tea dashi broth. 7. Finish with chopped spring onion and sesame seeds. This salmon ochazuke is warm and savoury with crispy salmon against a light, comforting broth.
