Fudgy Buckeye Brownies  I think we can all agree that chocolate and peanut butter is one of the best combinations out there and these Buckeye Brownies are the ultimate version of it. The brownies are so fudgy and decadent and these would be the perfect addition to a tailgate, fall party, or just a Friday night when you need a good treat. Recipe below or on my Substack (link in bio - click “Full Recipes)!🫶🏻 For the Brownies: ¾ cup (170g) unsalted butter, melted and slightly cooled    1 cup (200g) granulated sugar  ¾ cup (165g) light brown sugar, packed ¾ cup (64g) Dutch process cocoa powder  2 large eggs, room temperature  ½ teaspoon fine sea salt  1 tablespoon pure vanilla extract  ¾ cup (90g) all-purpose flour  2 tablespoons (42g) honey  ½ cup (85g) mini semisweet chocolate chips  For the Peanut Butter Layer: 1 cup (250g) creamy peanut butter, do not use natural peanut butter 4 tablespoons (56g) unsalted butter, softened  1 cup (120g) powdered sugar, sifted  1 teaspoon pure vanilla extract  ¼ teaspoon fine sea salt   For the Chocolate Ganache: 6 oz (170g) semisweet chocolate, chips or chopped ½ cup (120ml) heavy cream  1 tablespoon (14g) unsalted butter  ¼ teaspoon fine sea salt   Instructions: Preheat oven to 350°F and line an 8x8 metal baking pan with parchment paper.  In a large mixing bowl, whisk together the melted butter, granulated sugar, brown sugar, cocoa powder, and salt.  Whisk in eggs, one at a time, followed by vanilla and honey.  Fold in the flour and chocolate chips until no dry streaks remain but do not overmix.  Bake for 28-30 minutes until the edges are set and the center still slightly jiggles.  Allow to cool completely.  Once the brownies are cool, make the peanut butter layer. Beat the peanut butter and butter together until smooth.  Then beat in the powdered sugar, salt, and vanilla.  Spread evenly over the brownies.  To make the chocolate ganache, heat the cream for about 30 seconds in the microwave until it’s steaming. Pour the cream over the chocolate, let it sit for 2-3 minutes, then whisk until smooth.  Stir in the butter and salt. If it is not completely smooth, microwave in 15 second intervals, stirring between each, until completely smooth.  Pour over the peanut butter layer and smooth into an even layer.  Refrigerate for at least 4 hours until set then slice into small squares. Top with flaky salt if desired.
