Mexican Food! Mexican Food! To get the serving size here's how you do it! Once your pozole is all cooked, scoop out all the hominy and chicken, then weigh that and split it into 5 even portions. Mine weighed 55oz so I divided by 5 and came up with 11oz per serving! Once I scooped out 11oz of hominy and chicken I added the broth back into each container. I did end up with leftover broth but that's okay. All the protein is in the chicken breast! For the chicken, I cooked and seasoned it with salt, bay leaves, garlic, onion, and peppercorns! As I mentioned I would use ground pepper instead of whole peppercorns so you don't end up having a bite with a strong pepper taste! Remove the chicken when it hits 165 degrees. You will also remove the onion and garlic, add that to your blender cause that's part of the sauce! You ou can drain some water from the chicken, just no all of it though because that is what will end up being your broth!! For the sauce, I boiled 3 chile poblanos, 5 small tomatillos, and 1 jalapeño. Once those softened I put them in the blender with the onion and garlic that cooked with the chicken. I added half a bunch of cilantro and a handful of lettuce, blended and added it to the pozole once the hominy was ready! Don't forget you can always add more salt and pepper at the end if you feel like it needs a little more! For the hominy you want to get 4 cups. Give it a good rinse and cook it for about 30 minutes in the same water you cooked your chicken in! You can try a piece before you dump your sauce and chicken in to make sure it's nice and soft! The chips are optional but if you want to make them just cut up 2 “A La Madre” tortillas” spray them with some zero-calorie cooking spray air fry them on high for about 8-9 minutes, flipping them twice and take them out when they are crispy! Enjoy it with some shredded lettuce and lime! Ingredients 2.5lbs chicken breast 4cups white Hominy 3 chile pueblanos 3 cloves of garlic 1 Jalapeño 1/2 a bunch of cilantro Handful of lettuce 5 small tomatillos or 2 large ones Half an onion Pinch of oregano 4 bay leaves Limes Salt and pepper to taste!
