@sbsnews_au: Rescue teams in Nepal are racing to free more than 930 workers believed to be trapped in at least six different hydropower projects destroyed in last week's devastating flash flood. The number of people killed in the disaster has risen to at least 903, while more than 4,200 remain missing in Nepal and Tibet – that figure includes 43 Australians. Kuwaiti Lamb Majboos Ingredients: * 5 tbsp oil * 600 g boneless lamb, large pieces * 1 cup rice, soaked 3 hours * 2½ cups warm water * 1 tbsp whole black pepper * 1 tbsp cumin + 1 tbsp cumin powder * 1 tbsp coriander powder * 3 star anise * 2 cinnamon sticks * 2 bay leaves * 2 dried lemons * 3 green + 2 black cardamoms * 1 tbsp crushed ginger-garlic * 1 tbsp chopped onion * 1 tbsp salt + 1 tbsp black pepper * Pinch saffron + 2 tbsp milk * 1 tbsp tomato paste * 1 tbsp chilli flakes * Pinch oregano * White raisins Method 1. Sauté whole spices, ginger-garlic and onion in oil. Add lamb, water, salt and pepper. Pressure-cook on very low heat for 1 hr 15 min. 2. Remove lamb and strain the yakhni. Reserve 3 tbsp. 3. Cook soaked rice in the yakhni with cumin, coriander and saffron milk. Cover and cook on very low heat for 3–4 min, then switch off. 4. Mix reserved yakhni with tomato paste, chilli flakes, oil and oregano. Brush over lamb and pan-fry until crispy. 5. Fry raisins separately.
