Why is natural vanilla so expensive in perfume? 🍨 Vanilla is one of the most recognisable and widely used fragrance notes, but there is a huge difference between natural vanilla, vanilla absolute, vanilla extract, vanillin and ethyl vanillin. Natural vanilla comes from the cured pods of the vanilla orchid, Vanilla planifolia. Producing those pods is incredibly labour-intensive, from growing the orchid and hand-pollinating its flowers to curing and processing the harvested vanilla beans. Vanilla is also a fascinating example of the difference between a natural ingredient and the molecule responsible for its smell. Vanillin is the principal aroma molecule associated with the characteristic smell of vanilla, and it can be produced without using natural vanilla beans. Synthetic vanillin is therefore extremely important to modern perfumery - and synthetic does not automatically mean inferior. Ethyl vanillin is another related aroma chemical, with a stronger vanilla character than vanillin, which is why it is widely used when a more powerful vanilla effect is desired. This is why a vanilla perfume can smell incredibly rich and creamy without containing much (or any) natural vanilla absolute. Even luxury fragrances can combine aroma chemicals such as vanillin with natural vanilla materials and other ingredients to create a more complex vanilla accord.
