This isn’t a burger for everyone. It’s a burger for steak lovers. Thick, juicy, made with aged beef, and cooked more like a steak than a smash burger. If you like your burgers well done all the way through, this probably isn’t the one. But if you appreciate a good steak, this might become your new favorite. I used Gazarco's Steak Burger for this one and kept everything around it simple: sharp cheddar, deeply caramelized onions, and a roasted garlic mayo. Steps: Roasted garlic: Wrap 2 whole heads of garlic in foil with a drizzle of oil. Roast at 160–170°C for about 45–60 mins or until completely soft. Caramelized onions: Thinly slice onions. Cook in butter over medium-low heat, stirring regularly. Whenever the pan starts to dry out or the onions begin sticking, add a splash of water and scrape up everything from the bottom. Keep going for about 35–45 mins until deeply golden, soft, and sweet. Make the roasted garlic mayo: Add eggs, Dijon mustard, roasted garlic, salt, and pepper to a tall container. Pour in the oil. Place a hand blender at the bottom and blend, slowly lifting it up until everything emulsifies into a thick mayonnaise. Keep chilled until needed. Cook the burger: Season the burger generously with salt and pepper right before cooking. Heat a cast iron or stainless steel pan until very hot. Add a little beef tallow or oil. Cook the Steak Burger, until a deep crust forms on both sides and the center reaches medium or medium-well. This is a thick aged beef burger, so treating it more like a steak gives the best result. Add the cheddar cheese during the final minute so it melts. Remove the burger and let it rest for 5 mins, just like a steak. Build: Toast the bun. Add a generous layer of roasted garlic mayo. Top with the burger and melted cheddar. Add a mountain of caramelized onions. Finish with more sauce and the top bun. Done. Ingredients (1 burger): Burger: Gazarco Steak Burger Salt & pepper Beef tallow or oil Sharp red cheddar cheese slices Burger bun Caramelized Onions: 3 large onions (thinly sliced) 2 tbsp butter Water (as needed) Roasted Garlic Mayo: 2 whole heads garlic 2 eggs 1 tsp Dijon mustard 1 cup neutral oil Salt & black pepper to taste
