Here’s my non-alcoholic fruit cake soft, rich, and full of spice. No overnight soak, no fancy mixers, just pure flavour. Ingredients • 125 g butter • 100 g brown sugar • 150 g eggs (≈3 medium) • 112 g self-raising flour • 300 g mixed fruits (pre-made or homemade) • ¼ cup fresh orange juice (or apple juice) — up to ½ cup if you don’t mind a longer cook time • ½ tsp ground ginger • ½ tsp cloves • ½ tsp nutmeg • ½ tsp cinnamon • 1 tsp lemon zest (massage into the brown sugar) • 1 tbsp black treacle or browning • 1 tsp vanilla extract Steps • Add the fruits, juice, and all the spices to a small pot. • Cook over medium heat until the liquid disappears and the fruits look glossy. • Let it cool completely. • Cream butter and brown sugar until fluffy, then add eggs one at a time. • Mix in black treacle and vanilla. • Fold in flour gently. • Coat the cooled fruits with 1 tbsp flour to keep them from sinking, then fold them into the batter. • Save a bit of fruit to sprinkle on top before baking. • Bake at 165 °C for about 30 minutes, or until a skewer comes out clean. • Once it’s out, top with candied lemon slices and the reserved fruits. Tips & Tricks • If you use ½ cup of juice, cook the fruit longer so it’s not wet. • Browning gives a deeper flavour and colour treacle adds richness. • Keeps well for days; actually tastes better the next day. #EasyRecipes #cakemaking #fruitcake #christmascake #noalcohol
