Burrata & Fried Zucchini Chicken Ciabatta Serves 2 • 1 ciabatta roll • 1 chicken breast (300g) • 2-3 lemon slices • 2 zucchini, sliced into rounds • 1 ball burrata • Handful rocket • Handful basil leaves • Avocado • Pesto • Mayonnaise • Flour, for dusting zucchini • Olive oil • Salt and pepper Method: 1. Bring a pot of water to the boil with the lemon slices and salt. Add the chicken breast, cover, and turn off the heat. Leave for 30 minutes until cooked through, then rest and slice. 2. Dust the zucchini rounds lightly in flour, then fry in olive oil until golden and crisp on both sides. Drain on paper towel. 3. Toast or warm the ciabatta halves in the pan or oven. 4. Spread mayo generously on both sides of the ciabatta. Layer the base with avocado, rocket, sliced chicken, basil, burrata, pesto and fried zucchini. Season with salt and pepper, top with the other half and press gently. 5. Slice in half and serve.
