As a dietitian I can guarantee you that you are having more than 10% of what you put in the pan. that is a ridiculous statement. Granted, you're right, olive oil is not the enemy but starts like that make you lose credibility.

Where on earth are you getting “10% or less” from? 😂 Oil absorption varies massively depending on the food and cooking method, and the research absolutely does not support a blanket claim that <10% of the oil used is consumed.
And if it’s going into a curry, pasta sauce, etc, where exactly do you think the other 90% is going?
Olive oil is great. I use it all the time. It’s also ~120 calories per tablespoon, and those calories still count. Being monounsaturated doesn’t exempt it from energy balance.

This is incredibly disingenuous, if someone is using olive oil in their cooking, undoubtedly, they’re going to pour the entire contents of their pan upon completion, into their dish & consume the entire meal. Your argument is held on the notion that the person removes the fried items from the oil & consumes such, which is evidently not the case.

It depends on what you’re cooking. If you fry a piece of chicken in the oil, and dump the excess, you’re obviously not getting all the calories. But if you add the oil, then some chicken, veggies, and rice all to the same pan, you are consuming all that oil.

It depends on what I’m cooking. If I fry a steak, a lot of fat remains in the pan; the steak ever renders its own fat out, so I might end up with fewer calories. If I cook some kind of sauce though, the fat stays in the sauce.

That’s only true if you fry the thing in the pan and then take the thing out. If you fry the meat and then add rice and vegetables then you’re getting 100% of that oil. Hope this helps.
