in the last video, listen to the first thing she said!🥹i love social media (makes 6x cupcakes) you’ll need: - 1/3 cup olive oil - 2 heaped tbsp greek yogurt - 1 egg - 1/3 cup sugar - 1 medium carrot, grated - 1tsp cinnamon - 1tsp mixed spice - a handful of chopped walnuts - 1/2 cup self-raising flour - 1tsp baking powder (for the cream cheese frosting): - 100g full fat cream cheese - 50g unsalted butter - 1tsp vanilla extract - 75g icing sugar (to serve): - chopped walnuts method: 1. begin by mixing the olive oil, yogurt, egg, grated carrot, cinnamon, all spice, walnuts, flour and baking powder until thoroughly combined and no lumps of flour are visible. 2. evenly spoon about 2tbsp of the mixture into roughly 6 cup cake cases! 3. bake at 170c for about 15 minutes or until beautifully golden and risen… 4. remove from the oven and allow to cool whilst you prepare the cream cheese frosting. 5. in a seperate bowl, whisk together the butter, vanilla and cream cheese until smooth. 6. gradually add the icing sugar as you whisk (if you add it all at once, it will go everywhere!). 7. whisk until silky smooth… 8. transfer into a piping bag and pipe the frosting all over the cupcakes (it doesn’t need to be neat!). 9. sprinkle with a handful of chopped walnuts… deliver to your neighbour and let’s hope they enjoy!🤍 #baking #carrotcake #cake #carrotcake
