Recipe: 🧄 Slow-Cooked Garlic Beef Curry:
* Season 1kg beef chunks with 1½ tsp salt, 1 tsp each turmeric, cumin, coriander & black pepper.
* Brown the beef in 2 tbsp oil over high heat, in batches. Remove.
* Fry 2 sliced onions for 8–10 mins until golden. Add 8–10 chopped garlic cloves, 30g grated ginger and 2–4 chopped chillies. Fry 2–3 mins.
* Add 1½ tbsp tomato purée, 2 tsp each cumin & coriander, 1 tsp turmeric, 1 tsp Kashmiri chilli powder & ½ tsp cinnamon. Fry 1–2 mins.
* Add 400g chopped tomatoes + 400–500ml beef stock. Return beef, cover and cook at 150°C for 2½–3 hours until very tender.
* Remove lid for 15–20 mins to reduce. Stir through 1 tsp garam masala, 1 tbsp lemon juice, fresh garlic and kasuri methi. Season to taste.
* Finish with coriander and serve topped with a coriander & mint yoghurt sauce.
