i promised a lemon yogurt bowl pt 2…but slightly more ✨elaborate✨ (for the chia pudding) you’ll need: - 50ml any milk (i use whole) - 1 heaped tbsp greek yogurt - 1tbsp honey - 1 heaped tbsp chia seeds  (for the coconut granola): - 1/2 cup oats  - 1tbsp olive oil / butter - 2 heaped tbsp maple syrup / honey - a small handful of flaked coconut  (for the lemon yogurt): - 300g full fat greek yogurt  - zest of 1/2 a lemon  - juice of 1/4 of a lemon (a generous squeeze!) - 1tbsp honey (to serve): - fresh mango  - a handful of fresh raspberries  - almond butter  method: 1. begin by mixing the milk, yogurt, honey and chia seeds in a small bowl until thoroughly combined. 2. pop in the fridge for at least 30 minutes whilst you get on with the rest! 3. meanwhile, place a small frying pan on a medium to low heat and add in the oats, olive oil (or butter), maple syrup (or honey) and flaked coconut. 4. using a wooden spoon, toss around until the it’s are evenly coated. 5. leave to cook on a relatively low heat, stirring continuously until golden brown (about 5-10 minutes!). 6. gather the granola into one corner of the pan in one flat even layer. remove from the heat and allow to cool. 7. meanwhile, mix the yogurt with the lemon zest, juice and honey until thoroughly combined. 8. top with the chia pudding which should be set by now! 9. top with cubed fresh mango and fresh raspberries. 10. once the granola has hardened (about 5-6 minutes) use a wooden spoon to break up the granola into clusters. 11. carefully spoon the granola clusters into an available space on the bowl! 12. finish with a generous spoonful of almond butter… 13. and some extra honey if you prefer it sweeter! enjoy xxx🍋🥭 #breakfast #granola #yogurtbowl #yogurt
