as someone who works there, it's because everything is fresh. we press patties before open, the fries are made fully in house & we prep veggies fresh daily . we don't even have a freezer, only a walk in refrigerator (:

That is a sad amount of fries, in their heyday they would give you a ridiculous amount of fries even with a small. Also re: other comments, I will say I prefer the regular fries, Cajun can be way too salty.
