I also took a class through my local agriculture university’s extension program that was in-person and about 4 days long. It was so helpful to understand the food science and get hands on experience with professionals. Lots of universities offer this! No rebel canning. 🙅♀️

I’ve had jars fail, and I’m not saying you can always tell because you can’t but every single failed jar I’ve had so far, I can tell. It smells bad, has mold, or a noticeable un popped seal. I take 0 chances, if it doesn’t unseal right or smells it gets chucked. Now saying that, there’s things that just freak me out…we did baked beans last year and that’s a hard pass for me.

I was blessed to learn from my gram, mom and aunties. They all rebel canned and my gram used to use wax to seal her jams and jellies. I also watch so many canners on YouTube, mainly for the recipes but also just to keep my mind sharp so I don’t miss a step.
