@ashley_recipes: Ingredients Potatoes & Taco Meat 4 large russet potatoes 1 lb ground beef (or ground turkey) 1 packet taco seasoning ½ cup water Creamy Potato Filling 1½ cups shredded cheddar cheese or Mexican blend cheese ½ cup sour cream ¼ cup milk (optional, for extra creamy potatoes) Salt, to taste Black pepper, to taste Taco Toppings ½ cup salsa ½ cup diced tomatoes ¼ cup diced onion Green onions or fresh cilantro (optional) Optional Toppings Shredded lettuce Jalapeños Extra sour cream Extra salsa Extra shredded cheese Directions 1. Bake the Potatoes Preheat the oven to 400°F (200°C). Wash and dry the russet potatoes. Bake them for 45–60 minutes, or until they are completely tender when pierced with a fork. 2. Prepare the Taco Meat While the potatoes are baking, brown the ground beef or turkey in a skillet over medium heat. Drain any excess grease. Add the taco seasoning and ½ cup water. Stir well and simmer for about 5 minutes, allowing the seasoning to absorb into the meat. 3. Prepare the Potato Filling Allow the baked potatoes to cool slightly. Cut each potato lengthwise down the center. Carefully scoop out the soft potato inside and place it in a large bowl, leaving the potato skins intact. 4. Make the Creamy Potato Mixture Add the following to the potato filling: ½ cup sour cream ¼ cup milk (optional) A little shredded cheese Salt Black pepper Mix everything together until the potatoes are creamy and well combined. 5. Add the Taco Meat & Salsa Stir the prepared taco meat and ½ cup salsa into the creamy potato mixture. Mix gently until everything is evenly combined. 6. Fill the Potato Skins Place the potato skins on a baking sheet. Generously fill each potato skin with the taco-potato mixture. Top with the remaining shredded cheddar or Mexican blend cheese. 7. Bake Again Return the filled potatoes to the oven and bake for 15–20 minutes, or until the cheese is completely melted, bubbly, and lightly golden. 8. Add Toppings & Serve Remove the potatoes from the oven and top with your favorite toppings, such as: Diced tomatoes Diced onion Green onions Fresh cilantro Shredded lettuce Jalapeños Sour cream Extra salsa 😋 Serve Hot & Enjoy! These loaded cheesy taco potatoes are best served hot, with plenty of melted cheese and fresh toppings.
