 This Goat’s Cheese & Caramelised Onion Tart is the ultimate cosy comfort for a chilly autumn day 🍂Buttery pastry, golden onions, and rich goat’s cheese come together in a bake that’s simple, satisfying, and oh-so-delicious. Perfect for family dinners or lazy weekend lunches. 
 
 1 pack short-crust pastry
 50g butter
 3-4 onions, finely sliced
 2 free-range eggs
 300ml double cream
 140g mature hard goats’ cheese
 125g plain soft goat’s cheese, cut into 6
 1 tbsp apple cider vinegar
 2 sprigs fresh thyme or a few chives
 22-24cm loose-bottom tart tin
 
 Roll out the pastry to line the tin. Prick the base with a fork and chill in the fridge or freezer for 20 mins.
 
 Heat oven to 180C/fan 160C. 
 
 Heat the butter in a saucepan. Add the onions and season with salt and pepper pepper. Place the pan on a medium heat and cook the onions for 30 mins, stirring occasionally. Add the vinegar and cook for another 15 mins or until the onions are silky soft and glossy. Stir in the cream. Remove from the heat and leave to cool. 
 
 Line the tart case with the pastry, cover with greaseproof paper and fill with baking beans. Blind bake for 20 mins, remove the paper and beans, and cook for 5-10 mins until biscuit brown.
 
 Grate half of the hard cheese, cut the remainder into 1 cm cubes. 
 
 Beat the eggs in a bowl, add to the onions along with the hard cheese. Pour the filling into the pastry case, top with the soft goat’s cheese, and bake for 35 mins until set and golden. 
 
 Leave the tart to cool. Remove from the tin and place on a plate, sprinkle with the herbs and serve with a sweet chutney and green salad.
